Recipe Monday

 I mean, you eat them together, right? So, why not put them together!? 

 Put all of your dry ingredients into a bowl.

 Whisk them all together until combined.

 Put all of your wet ingredients into a separate bowl and mix together until combined.

 Slowly add your dry mixture into your wet mixture. Mix on low if you using an electric mixer.

 Mix until just combined.

 Then you need to bring in your special guest. Premade chili. This would be a great recipe to make if you have left over chili, but a store bought version works fine. You won't go through very much of it, so don't feel like you need to make a huge pot of chili just to make these.

Line a muffin pan with paper liners and then fill just the bottom with your corn muffin mixture. Then add a dollop of chili (about 1 tsp).

Fill with some more corn muffin mixture until about 3/4 the way full.
Bake at 400°F for 13-15 minutes. 

Then you're left with these delightful little corn muffins with a gooey chili center.
Eat one while it is still warm. It's awesome.
They're also amazing once they've cooled. 
Heck, they're just good all around.
