Dice up 1 whole onion.
Saute it in a large pan with a little bit of oil. Saute until translucent.
Season it up a little with 1 tsp. paprika.
And 1 tsp. garlic powder. Add salt and pepper to taste.
Cook your pasta according the packaging. Whatever kind you want. American goulash usually has elbow macaroni, but I went with whole wheat penne. Guess why? Yep, cause it's what I had. Oh, and I only used 1/2 a box.
Drain and rinse your black beans.
Add your pasta and black beans into the pan. Mix it all together and then set it on a low heat. Cover and let it simmer together for 20 minutes. You want to give that pasta some time to soak up all of those yummy tomato juices.
Great idea for a Meatless Monday version of this meal.
