Recipe Monday

Need an easy make ahead snack or breakfast? This is a a great recipe just for that! 

Ingredients

You'll need 1 cup of creamy peanut butter. Put it into a bowl and microwave for about 30 seconds or until nice and smooth. 

Add 1/4 cup of honey into your melted peanut butter. 

Then add in 2 cups of your granola of choice. I used an acai berry granola. You could also just add in oats and your choice of additional ingredients. Chocolate chips, nuts, dried fruit, etc. 

Move it to a bigger bowl because you realized you did not give yourself enough room. Give it a good mix. If you are using a premade granola, I would suggest crushing it down into smaller pieces. You get big chunks sometimes and it doesn't hold together as well. 

Place into a mini-muffin baking pan. You could also use a regular sized muffin pan or just put it all into a cake pan to make bars. I think it will change the cooking time though. Just play around with it. Stick these into your oven that is preheated to 300°F for approximately 20 minutes or until golden brown. 

Then you have these bite sized adorable treats. 

They're pretty rich because of the peanut butter, but also pretty tasty. 
I love this recipe because you can play around with it a lot to change the taste.

    1. It can be a little tricky, especially if you're using premade granola. You need to break up any large chunks and really press it all together. Also, make sure it sits for a few minutes before you pull it out of the pan. I'm sorry you had trouble.
