Recipe Monday

Our stove still isn't hooked up, so here's another slow cooker recipe. A really, really easy one.

and chicken.

Put a little bit of water in the bottom of your Crock Pot along with 3 chicken breasts. Feel to free to use less unless you're going to be feeding a lot of people This makes a lot. Well, it seemed like a lot to us.

Pour in 2 cups of salsa. You can make your own or just buy your favorite. We had some southwestern salsa on hand, so that's what I used. 

Dump in a bag of frozen corn. 

Add a can of black beans (drained and rinsed). 

Season it up a bit with 1 tsp of cumin. 

1 tsp of garlic powder. 

Make sure everything is mixed together and just set it to low for 7-8 hours or on high for 4-5 hours. I just kind of made up these times. They sound good, right?

Basically you just want your meat to be cooked thoroughly and it should just fall apart.

This should soak up most of the liquid as well. Now you're left with your tasty chicken mixture. You can use it on tacos, nachos, or make a salad. 

I made salads with mine. Chopped up some romaine and spinach. Topped it with the southwestern chicken, a little bit of sour cream, and some crunched up tortilla chips. Mmm.
