Recipe Monday

We have been living without a stove since we moved here. When it comes to cooking meals, I've been having to think of alternative methods to cooking. The crock pot is always a life saver, especially when I want it to be easy. 

Ingredients
You'll also need milk, cheese, and spices to taste.

Start by pouring 32 ounces of vegetable broth into your crock pot. Set it to low.

Dice up 2 cups of broccoli. 

Dice up 3 large potatoes. 

Then put both your broccoli and potatoes in the crock pot along with the vegetable broth. 

Season with salt, pepper, and garlic powder to taste. 

Then you just let it cook on low for about 6 hours. You could of course do it on high for about 3-4 hours. You're just looking for your potatoes to be nice and tender. 

Add in 1 cup of milk. You could also add some flour or cornstarch to thicken it a bit if you'd like. I didn't have either one, go figure. 

Then grate some fresh cheddar cheese right into the crock pot as well. I would say I added in about 1/2 cup. Make sure to stir everything together to get it completely blended. 

Let your soup cook on low for about another 30 minutes to an hour or until you're ready to serve it up. You could also blend the soup completely so that it's nice and creamy. I just kind of mushed up some of the potatoes because I love having the nice big chunks in it as well. 

Crock pot recipes are almost never pretty, but this was very easy and quite tasty.
