Recipe Monday

I love baking. I love the baking I do around Christmas time even more. I've been so excited to get started on making cookies this year. I decided that the best way to start off the cookie baking season was by making my own recipe. 

Ingredients
butter (softened)
white sugar
brown sugar
orange extract
vanilla extract
baking soda
flour
salt
quick oats
cranberries (fresh or dried)
cinnamon (not pictured)
egg (not pictured)

I was particularly excited about trying out this recipe because of my new stand mixer! Isn't it fabulous? Okay, so it's not a Kitchen-Aid, but I am still extremely happy about it. 

Combine 1/2 cup (1 stick) of softened butter with 1/4 cup white sugar and 1/2 cup packed brown sugar. Mix this together on a medium speed for 1-2 minutes or until it becomes creamed together.

Then add in 1 egg along with 1 teaspoon orange extract and 1/2 teaspoon vanilla extract. Mix until combined. 

In a separate bowl, mix together your dry ingredients. This will include 1 cup of all-purpose flour, 1/2 teaspoon baking soda, 1/4 teaspoon salt, and 1/2 teaspoon cinnamon. 

Start adding your dry mixture into your wet mixture (a little at a time) and mix until it's fully combined.

Using a spatula, fold in 1/2 cup of diced cranberries and 1 cup of quick oats. 

Form your dough into small balls and place them onto a greased baking sheet. Using a fork or the palm of your (washed) hand, press each ball of dough down gently and flatten slightly. 

Cook in a preheated oven set to 375 degrees (Fahrenheit) for  8-10 minutes or until golden brown. 


This recipe will make approximately 2 dozen and can be doubled very easily. They turned out to be delicious! Feel free to add this to your collection of Christmas cookies you'll be baking this month.
